Pear Butter Streusel Cupcakes

These cupcakes/muffins have a delicate pear taste and are delicious right out of the oven or served chilled, plain or iced. Because you begin with a box mix—and The Oak Ridge Boys FavoriteTM Southern Style Pear Butter—they’re also simple to prepare.

For cake:
1 box yellow cake mix (plus the ingredients to make it per the instructions on the box)

Streusel filling:

  • 2 T butter
  • 1 T light brown sugar
  • 2 T chopped walnuts
  • 6 T The Oak Ridge Boys FavoriteTM Southern Style Pear Butter 

Optional toppings:

  • Whipped cream
  • Caramel sauce
  • Turbinado sugar

Preheat oven to 350 degrees. Line cupcake tins with paper/foil liners. Set aside.

Prepare yellow cake mix per package instructions. Set batter aside.

For streusel: In a small saucepan melt butter over medium heat and cook until bubbly. Stir in brown sugar. Mix well. Turn off the heat and stir in the walnuts and pear butter. Mix. (This makes enough streusel for 9-10 cupcakes. You may need to adjust the filling ingredients based on the size of your cake mix.)

Fill cupcake liners about one-third full with cake batter. Add approximately one tablespoon of streusel mixture. Top off with a layer of cake batter leaving enough room for expansion during baking.

Bake cupcakes until golden brown. Take the pan out of the oven and place it on a heat resistant surface. Allow cupcakes to cool slightly. Gently lift from pan; cupcakes are easily broken until cooled completely.

These cupcakes (which have a muffin-like consistency) are delicious served warm with vanilla ice cream. Or allow them to cool to room temperature and “ice” with heavy cream whipped to a stiff consistency. Also try them plain (no icing) with a cup of coffee or hot tea!
